Split Activity Days Classes by Age

Is it possible to create multiple combined-gender Activity Days ("Primary Activities") class rosters? I'm able to combine the boys + girls into one class, but from there I lose permissions to break them out further besides returning to the gender split.

(Context: Handbook seems to prefer Activity Days classes to be grouped first by age, then by gender when there are enough kids, but LCR defaults to a boys & girls grouping. We have a small-ish group and are having difficulty engaging the 7 year olds and 11 year olds in the same ways; we want to make two Activity Days classes that are split as "older" and "younger," rather than boys vs girls, which would match the split in their Sunday class rosters. LCR doesn't seem to allow this.)
